Recipe Share: Apple, Rosemary Crockpot Chicken.

I don’t know why I even post the recipes that we don’t really like, but I guess it’s a way to remind you that not everything we touch turns to gold. This recipe wasn’t bad. It just wasn’t great. We give it a solid average. Nothing special. Nothing horrendous.

Ingredients:
2 cups sliced onions
2 apples, peeled, cored, and sliced
2 pounds chicken, with bone, with or without skin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons rosemary
1 cup chicken broth
1/2 cup cream celery soup
2 cups cooked rice

Directions:
1) Arrange onion and apple slices in bottom of slow cooker. Place chicken pieces on top and season all over with salt and black pepper. Sprinkle rosemary over chicken.

2) In a medium bowl, whisk together chicken broth and soup. Pour mixture over chicken.

3) Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

4) Serve chicken, sauce, apples, and onions over rice.

I also made my own jam today. Blackberry to be exact. We bought a bread maker last night with some Christmas gift cards and our Valentine’s gift money that we set aside. We’re so pragmatic. Thus far, we’ve made a cinnamon loaf, a batch of blackberry jam, and some cheesy bread. All in less than 24 hours.
